End of the Harvest

The squash was excellent this year, and we had lettuce all summer... peppers, corn and cukes as well. Now it is time to put the garden to bed for Winter (except for the Brussels Sprouts, which continue in fine form!)
The weather has turned cold enough to kill the tomato plants, and I need to take them out and put the garden to bed for winter. I put up lots of Green Tomato enchilada sauce for our Turkey Enchiladas; traditional use for our leftover Thanksgiving turkey and the Tamales we always have on the day after Christmas. There may be some Salsa Verde left when Erin comes back this Summer, as there are three pounds of chopped green tomato in the freezer - I'll have to buy the peppers and onions, though, as I've use them all up!
